A salad retrospective

Last night, I was did a little summer cleaning. I know most people do their big “cleans” in the spring, but I like to be different. In keeping with the different theme, I also wasn’t cleaning my house, though I did that too (per my weekly cleaning schedule, obviously.)

I was cleaning my computer. My computer has been operating at a snail’s pace lately and it drives me bonkers, so I thought if I trashed some old files and pictures that I don’t need, my baby will start to run better. And by better I mean faster. Faster running = happier Katie.

While I was looking through some old blog posts and old photos, I realized that WHOA I eat a lot of salads.

Yes, I eat salad for breakfast. Call me weird, I don’t care. But also? Don’t knock it until you try it. You’ll be converted, I promise.

Scrambled eggs over greens with some salsa might be the best breakfast ever. That is truly the breakfast of champions.

Of course, salad isn’t just for breakfast….

sprouts, red onion, tomatoes, celery, beets, sauerkraut, mushrooms, red bell peppers, avocado, Gena’s zucchini dressing

With whatever I could find in my sister’s fridge – baba ganouj, mango salsa among other thing.

Then there are the mix-meat-from-a-can/pouch salads. I have branched out beyond tuna lately to include shrimp and crab also.

You know what I just thought about? BRATS. Grill a few extra in the evening and crumble the leftovers over a salad. Oh man, I am the smartest woman alive.

“Make use of what you have” salad

Generally, my salads are mainly veggies, with some meat of some kind (loving the shrimp lately), and some kind of fat. Unfortunately, my favorite salad fat is avocado, which were dirt cheap when I lived in Arizona. Moving to the midwest has all but halted my avocado consumption because I’m a total cheapskate, but I need to just suck it up and deal.

Avocados are so tasty, it’s probably worth going into debt over them, no?

That right there is just the tip of the proverbial iceberg, as they say, but that’s probably enough for one day.

What is your take on salads? I used to HATE salads, and now I eat at least one giant salad a day. And when I say giant, I mean it. I don’t throw that word around loosely.

Is there a food you love that you would pay anything for?

Any great avocado recipes?

  1. love this roundup! you do eat a lot of salads (me too) and the more chunky veggies the better…I love how you even have breakfast salads.

    Avo recipes? Yeah I have an entire post or two full of them. Honestly though, straight up and plain is my preferred method so I can just savor their true flavor.

  2. Hooray Breakfast salads! I too eat salads for breakfast- sometimes all meals are salads.
    These all look great- I want to try some of your combos-especially the sushi without the rice…

    I don’t know if there is a food I would pay anything for- maybe I just haven’t found it yet…coffee though…

    My favorite way to eat avocado is with strawberry, mint, cilantro and cucumber, with some lemon and salt- goes well with shrimp or crab. :)

  3. i love salads! i eat one every day! i have been blending avocado with fresh herbs/romaine or cabbage and making chilled soups. try avocado+ginger root+red pepper flakes & fish sauce + 1 cucumber + yellow pepper and a cup of water. yum!

  4. I can’t handle meat in salads. It really grosses me out… just thinking about it, ew. But I LOVE non-lettuce based salads, iceberg gives me lettuce burps and I don’t want to taste that all day.

    I buy broccoli pretty much at any price, and living 9 hours north of the US border it can get pretty pricey! Tomatoes as well, toasted tomato sandwiches are always my go-to food when I don’t feel like really cooking or slaving away in the kitchen .

  6. I LOVE salads. I eat one every day at lunch–it never gets old, because it’s always changing. This post is just what you’d see at my house. All sorts of different ingredients: veggies, protein and healthy fat. I’ve never had a breakfast salad, but that might be something I add to my “to do” list. :)

  9. LOVE salads — but you know how you see people eat salads with big ole raw broccolli and carrots and stuff? Me?Um…not so much with that! I like lightly steamed veg or cooked some other way mixed with fresh veg like tomato onions and greens. I think raw makes my tummy yuk.

    Also — I really can’t get INTO a salad without protein somewhere and I’m not talking hummus. Fish, eggs, SHRIMP, fakeprocessedveggiemeat. Tofu. Like the mamwich commercials….it makes it a meal.

    PS- & aw, hail YEAH to our breakfasts — but I call it “Breakfast of Champi-YUMs”
    It’s so funny. I look at bowls of oatmeal and pancakes with the same amount of “uggghh how could you eat that for breakfast!” as I’m sure we get for doing our thang.

  10. Avocadoes are worth any price (but I do miss the days of the 33 cent avocado at that one Lake Havasu grocery store.) My coworker told me this summer that she has never seen anyone eat as many avocadoes as me. Salads, sandwiches, guacamole, with salmon, slathered on a rice cake… but one of my favourite actual recipes is this quinoa salad http://birdsandbaking.wordpress.com/2011/02/18/must-eat-avocado/ (but with black beans as well.)

  11. A cooked brat cut up on a salad with lots of different veggies, I thought I came up with that idea!!! (only because that was the only cooked protein available in the house at the time) Makes a great taco salad also! Just saying……

  12. I’m willing to bet your digestion is flawles! Love salads. Avocado mashed on jicama disks, or with hot sauce, or mixed with edamame :)
